A wide range of spiral AV and AVI mixers is available, with dough capacities from 80 kg up to 900 kg.
These mixers can be equipped with various options, making them suitable for both small- and large-scale production of bread, viennoiserie (Vienna-style pastries), and pizza.
Thanks to their robust and reliable design, they are ideal for industrial use. The mixing bowl is driven by a polyamide (Ertalon) drive gear, ensuring positive drive and consistent production results.
The mixing bowl does not slip, even when CO₂ or ice is added during the mixing process.

Cost-Effective and Sustainable Production
The energy used to rotate the bowl is directly recovered and transferred back to the movement of the mixing tool. Thanks to variable rotation speeds, the exact amount of energy required for each recipe can be precisely adjusted.
During the kneading process, the peripheral speeds of the bowl and the mixing tool differ. This causes the mixing tool to drive the bowl, making speed control more challenging. At VMI, we chose to store the energy within the drive system of the mixing tool, preventing unnecessary energy losses. As a result, energy consumption is minimized while both production efficiency and environmental responsibility are enhanced.
Enhanced Operator Comfort
The noise level generated by the KNEADSTER during operation is limited to 85 decibels, ensuring a more comfortable working environment for operators.
The removable bowl offers easy and safe handling thanks to its two integrated handles.
The control panel can be positioned on the right, left, or remotely, providing maximum operational flexibility and ergonomic comfort.
VMI mixers provide excellent kneading conditions for delicate products such as French baguettes.
Thanks to removable bowls, the dough can rest while production continues without interruption. When used together with lifting systems, bowl emptying becomes extremely easy and ergonomic.
Three Different Drive Systems – Solutions for Every Requirement
VMI offers three different drive systems to suit various mixer types and application needs:
Wheel and screw system
Conical torque system (Mahot)
Gear belt drive system
This variety allows the mixers to work in perfect harmony with special applications such as removable bowls or rotary table systems (carousels). Designs optimized for each application ensure maximum efficiency and precise process control.
Wide Range of Mixing Tool Options
VMI provides a broad selection of mixing tools specifically designed to meet different kneading and mixing requirements.
These tools are available in aluminum or stainless steel versions.
Features:
Three-arm stainless steel mixer, specially developed for preparing sauces and fillings with ideal consistency.
Motorized Bowl Drive System – Precise and Powerful
VMI fork mixers feature a dedicated mechanical design that follows the eccentric movement of the mixing tool.
In all models, the bowl operates with a positive drive system. The pulley–belt mechanism reduces speed to ensure controlled and homogeneous kneading.
Optionally, a speed variator can be integrated, allowing optimal mixing speeds to be set for different types of dough.
